Salmon Pate! It’s delicious. It’s savory. It’s refined. It takes 20 mins to make. Go ye and do it. (Mine looked just like that but it was scarfed up before I could take a photo, so this one is from the web.)

hot-smoked salmon 200-250 g, flaked
unsalted butter 100 g, softened
Philadelphia cheese 100 g
half-a-lemon
parsley a handful, chopped

Put the butter and the cream cheese together in a bowl. Flake and chop up the salmon roughly. Combine with the butter and the cheese, squeeze the lemon dry over the fish, add the parsley and mix it together with a fork or with a potato masher till roughly blended. Serve on top of lettuce leaves with a fresh baguette. Yum! Serves 4.
